Tuscany has a special place in Fulvio’s heart. It was here that he first gained his reputation for exemplary food, at acclaimed restaurant Gambero Rosso. Autumn is a special time in the region. It’s the season when some of the region’s culinary treasures are revealed – including one of the most revered ingredients in the world, the truffle.
Travel between rolling countryside and history-layered cities and learn more about the local cuisine and culture. In Florence, try your hand at pasta-making and taste traditional ragu dishes. Extend your sensory journey and meet the ‘nose’ of a revered perfume house. Then dine under autumnal skies on the terrace of our hotel, overlooking the russet dome of the duomo.

Morning: Pasta making class in Florence, delving into the art of ravioli, lasagne, pappardelle and cannelloni
Lunch: Dining on a local delicacy, Wild Boar Ragu
Afternoon: Fragrance journey to Lorenzo Villoresi museum, with the nose of the perfume house
Dinner: Evening meal cooked by Fulvio, on the terrace of Hotel Savoy
Morning: Truffle Hunting with local expert, Giulio Benuzzi
Lunch: Created by Giulio and Fulvio in the hills
Dinner: At leisure or dining at Trattoria Sostanza Firenze – a traditional trattoria and Fulvio and Pierre Hermé’s favourite place in Florence
Morning: Visit to the Antinori vineyard in the Tuscan hills
Lunch: Dining on local seasonal dishes, with wine tasting
Afternoon: Classic Tuscan bread soups such as ribollita, pappa al pomodoro and fagioli
Dinner: Evening at Florentine Renaissance gem, Palazzo Gondi – a special meal cooked by Fulvio, paired with local wines, in an elegant room within the palazzo
Our culinary secret retreats require a minimum of 6 participants to proceed. The final program will be confirmed two weeks before the scheduled arrival date.
