Welcome to Number One, a 4 AA Rosette Restaurant where modern Scottish cuisine meets world-class service.
Our dishes are fashioned using seasonal ingredients carefully sourced from an exceptional list of trusted suppliers, fusing Scottish cuisine with modern flair.
The Team
Head Chef John Munro joined Number One as Senior Sous Chef in 2022, following his roles as Junior Sous Chef at the Michelin-starred The Black Swan and Sous Chef at The Little Chartroom, Edinburgh. In 2024, he introduced the restaurant’s first beehive, also taking on the role of head beekeeper. Number One currently holds four AA Rosettes, is Michelin Guide-recommended, and is included in the prestigious La Liste, a listing of the world's best restaurants.
Restaurant Manager Emma Hemy, winner of Hotel Restaurant Manager of the Year 2021, and Edinburgh local Keith McGregor, Assistant Manager, oversee our front-of-house team, providing every guest with truly world-class hospitality.
