Federico Pavan

Having started his career in 2006 in Verona, Italy, Federico then moved to the bright lights of Madrid. In 2012, he received a call from Salvatore, ‘The Maestro’ of cocktails and the rest is history. The soul behind our unique menu and the precision behind the bar, Federico’s love for the craft is unparalleled.

‘The Maestro’ has been making innovative cocktails for 40 years now and continues to conjure flavourful surprises at The Donovan Bar. A best-selling author and award-winning industry legend, Salvatore’s famous Breakfast Martini is sure to add the perfect twist to any evening.

Fabio Spinetti

Bringing over 18 years of experience from London’s most glamorous hotel bars to the table, our Bar Operations Manager Fabio Spinetti is dedicated to stirring up creative cocktails and memorable gastronomic experiences. Spinetti adds a contemporary twist to our prestigious collection of vintage labels thanks to his taste for rare spirits and liqueurs. A man of many talents, he can speak English, French and Spanish and recommend wine and cocktails to tingle your taste buds in all three languages.
