Zest for Life: the Sun-Kissed Legacy of Linguine al Limone

The great American author John Steinbeck once described the Amalfi Coast as ‘a dream place that isn’t quite real when you are there and becomes beckoningly real after you have gone’. CHIARO’s Executive Chef Matthias Runge and Director of Food at Rocco Forte Hotels, Fulvio Pierangelini, take you there with their signature Linguine al Limone.

The story of this iconic pasta dish starts in Southern Italy. Arising from climate necessity – rocky coastal terrain presented challenges for vegetable farming while sun-soaked lemon trees thrived – the recipe has been loved for generations. Matthias Runge explains:

‘The dish originated on the Amalfi Coast in Campania, where lemon cultivation looks back on a long history of spectacular varieties developing. Linguine al Limone is now one of Italy's pasta favourites and is one of the many creations of Italian cuisine in which a simple list of ingredients is transformed into an amazing meal with little effort. 

Matthias prepares the dish with Amalfi lemons, sweet and heavy with juice: “We believe simplicity is based on flavour, so we focus on using authentic Italian ingredients to create dishes bursting with flavour and authenticity. CHIARO sources fresh, high-quality ingredients directly from trusted local suppliers with whom we have very close and friendly contact.’

Fulvio Pierangelini knows that a perfectly executed pasta dish fills not just your stomach, but your soul. A dish that welcomes improvisation, he pairs CHIARO’s Linguine al Limone beautifully with Sicilian zucchini flowers, a fleeting seasonal treat that he makes the most of at the very moment that nature intended:

‘The key is to enjoy them as soon as possible after harvesting for the best flavour. Harvest them when they are young and tender, usually in the early morning, and use them immediately. Enjoy their delicate flavour and texture by stuffing, frying, or adding them to pasta dishes or salads. The mild, slightly nutty flavour perfectly complements the tangy citrus of Linguine al Limone. The freshness adds a delightful crunch and texture, while its mild flavour allows the lemony sauce to shine. The green colour of the zucchini adds visual appeal, making the dish even more inviting.’
