Welcome to Number One, a 4 AA Rosette Restaurant where modern Scottish cuisine meets world-class service.
Our dishes are fashioned using seasonal ingredients carefully sourced from an exceptional list of trusted suppliers, fusing Scottish cuisine with modern flair.
The Team
Edinburgh born Mathew joined Number One in May 2021 from his previous roles as Head Chef of Michelin-starred Northcote, Lancashire and Sous Chef of Castle Terrace, Edinburgh. Number One currently holds four AA Rosettes, is Michelin Guide recommended and included in the prestigious La Liste, a listing of the world's best restaurants.
Restaurant Manager Emma Hemy, winner of Hotel Restaurant Manager of the year 2021 and Edinburgh local Keith McGregor, Assistant Manager oversee our front of house team providing every guest with truly world class hospitality.

We wish for everyone to feel comfortable, so whilst we do not operate a dress code, we kindly recommend that our guests are respectful of the environment we have created here at The Balmoral and refrain from wearing sportswear, shorts and beach shoes in our restaurants. Our guests within the hotel usually opt for a smart-casual style.
