"My vision of sustainability in food is simple: I believe in celebrating seasonal, local produce, especially fruits and vegetables. We don’t need to rely on ingredients flown in from across the world. Living by the Adriatic Sea has made me deeply mindful of sustainable fishing practices. For example, I respect fishing seasons, and ensure legal catch sizes to protect young fish and preserve marine life for future generations."

Gutshof Polting

Located in Lower Bavaria, Gutshof Polting has been a family-owned estate for over five generations. Established in 1899, it is renowned for its dedication to ethical animal husbandry and sustainability, with particular attention to agriculture, pond and forestry management, and traditional sheep farming. Gutshof Polting regularly supply us with quality meat and fish including corn-fed poulards, lamb, kid, veal loin & fillet, as well as char & salmon trout. 

Frische Paradies

Situated in the historic district of Munich, Frische Paradies is known for its premium selection of fresh fish, meats, wine, fruits, vegetables, and delicacies like caviar and truffles. Our close relationship with them ensures quick delivery times, with products ordered in the morning arriving by the afternoon, allowing us to work with the freshest ingredients. 

Tölzer Kasladen

For over 50 years, Tölzer Kasladen has been a beacon of cheese craftsmanship, specialising in artisanal varieties from across Europe. Each cheese is meticulously matured in their own ageing rooms and sourced from select dairy farms, ensuring the highest quality while preserving the rich traditions of cheese-making. We trust Tölzer Kasladen for our Italian cheese selection, including varieties like Rocchetta, Camembert di Bufala, Taleggio, Fontina, Gorgonzola, and Clock Cabernet di Merlot.

Honest Catch

Honest Catch are innovators in the seafood community with a strong focus on sustainability and quality. They are especially well known for responsibly breeding their own Bavarian shrimp, which we use, alongside Gambero Rosso, in our carpaccio. Both of which are favourites among chefs for their fresh, delicate flavours and a must-try in our restaurant.

Back Geschwister

Back Geschwister is celebrated for its top-quality sourdough, a favourite at The Charles Hotel. Baked with passion and precision using time-honoured methods, they have earned the trust of Germany’s finest chefs. From oven to delivery, their commitment to freshness and flavour is evident in every loaf.

Kochstoff

Kochstoff offers handpicked, high-quality ingredients, sourced directly from trusted suppliers across Europe. With a focus on exceptional produce, Kochstoff is the go-to for chefs seeking that special ingredient to elevate their dishes. From seafood directly sourced from French fishermen to handpicked goods from the Paris wholesale market, Kochstoff is committed to delivering excellence.

Genuss Imkerei Dombrowski

Genuss Imkerei Dombrowski offers high-quality, artisanal honey crafted through sustainable and ethical beekeeping. Their focus on purity and careful production of bees and their habitat has made their products highly regarded by those who appreciate authentic, natural flavours.

Van Nahmen

Founded as a Rhineland apple butter operation in 1917, Van Nahmen was the first to start making fruit juices. For more than 100 years and still today,  orchard owners from the Lower Rhine and nearby Münsterland regions commission them to press their apples into juices. If the quantities have increased, the quality has remained unchanged. Still owned by the original family, they are producing our delicious juices.
