"My vision of sustainability in food is simple: I believe in celebrating seasonal, local produce, especially fruits and vegetables. We don’t need to rely on ingredients flown in from across the world. Living by the Adriatic Sea has made me deeply mindful of sustainable fishing practices. For example, I respect fishing seasons, and ensure legal catch sizes to protect young fish and preserve marine life for future generations."
